I always have a problem with my spinach getting slimy in the fridge before we use it all up. It lasts only 7 days or less for us (I’m the only one in the family eating it).
One day I inadvertently stored a bunch of fresh ginger root in the same bag (trying to quell the overpopulation of separate ziplock baggies in my fridge).
The spinach lasted much longer! Was I surprised? Not really. I already knew about the antioxidant and other health properties of ginger–little did I know it would keep my spinach from spoiling quickly. Plus, the ginger is still fresh and usable!





Are you still juicing? How is that going for you?
Yes, Jen, I’m still juicing. I find it amazingly energizing and enjoyable, with one drawback: cleaning the parts of the juicer when I’m done. It takes 5-10 minutes, and often I’m more interested in preparing the rest of my breakfast (I juice first thing in am before breakfast, or before other meals) than in scraping the pulp off the juicer and scrubbing it up. Discipline, discipline!
Tell me about it! I have a little hand crank juicer and even that can be a pain to clean. Can’t even imagine the hassle of a Champion… BUT, the health benefits cannot be denied. I juice in my Blendtec these days. There’s an extra step of straining the juice through a nut milk bag, but its not that big of a deal.
